PREP TIME : 1 hour
COOK TIME : 15 minutes

INGREDIENTS
 

-        for the whipped cream:

  • 500 ml Heavy cream 
  • 200 ml Heavy cream 
  • 38 g Icing sugar    
  • 215 g Mascarpone or cream cheese

-        forthe red shortcrust:

  • 550 g Flour
  • 225 g Icing sugar  
  • 225 g butter
  • 5 g salt
  • 2 pc eggs
  • 2 tbsp vanilla
  • 10 g red food coloring

INSTRUCTIONS
 

  • - For the whipped cream: soak the gelatin in coldwater. Warm it up 200 ml of cream with vanilla without the let it boil. Stir inthe gelatin well drained and icing sugar. soften the mascarpone, pour the creamwith the gelatin, then the rest of the cream, mix the whole thing. Place 3hours in the refrigerator.
    2 - for the red shortcrust: in the bowl of a robot,mix the flour, icing sugar and salt. Add the chopped butter cubes then mixuntil you get a sandy texture. Add the lightly beaten eggs with the red coloradd the vanilla, mix at low speed and stop when the ball is formed.
    3 - Divide the dough into three and roll out eachpiece of dough between 2 sheets parchment paper to a thickness of 3mm. Placethe patterns on the dough and cut along the paper with a knife. and place itfor 30 minutes in the fridge.
    4 - Preheat the oven to 170°/340F
    5 - Bake15-20 mins. Let cool few minutes.
    6 - Fill a piping bag with the cream. Pipe thecream on the first set of numbers. Distribute strawberries in the center.Refrigerate for at least 15 mins. Place the second number on the first. Pipethe cream. Distribute strawberries and raspberries and pomegranate. Refrigerate15 mins minimum. place the last one. pipe the cream, then place the rest of thefruit in the center. finish with the decoration.
    Chill at least 1 hour before serving.
